Chapter 1: The Beginning

In 2020, Max sat on his veranda in Tuscany (*unfinished roof in Chinatown, NYC) longing for a way to cook for all his little pals around this incredible nation! It struck him like lightning to Benjamin Franklin: “I should ferment a mild hot sauce so everyone, even those with sensitive tummies, can enjoy the incredible taste of fermented peppers and garlic.”

He escaped the global pandemic, leaving everything behind except his vintage furniture and Kitchen Aid stand mixer. He landed in sunny and apocalyptic Los Angeles and continued to make his yummy hot sauce. After processing thousands of pounds of peppers, Max learned just how crazy and beautiful fermentation can be. There was something special about each batch changing little by little…

Chapter 2: The Age of Caesar

One cold winter morning, Max opened his front door and took a deep breath. It had rained the night before… yeah… and it was dewey as hell. A crow flew across the sky, “CAKAWWW CAKAWWW” and dropped a jar of caesar salad dressing in his palms. Max took one taste and said “I’m stealing this crow’s recipe this is amazing!”
